How to Prepare the Best Hummus in the Most Traditional Way?


Hummus is basically the common name of the Arabic spread ‘ḥummuṣ bi ṭaḥīna’. The Mediterranean favourite is a wholesome protein-packed dip that can be considered as a healthful snack or satisfying appetizer too. Nothing can compete with the serving of a bowl of warm hummus and pita or sautéed veggies. Though the spread appeals to all ages with its explosively vast array of flavours,  it is the purest form of the item that has made it quintessential in the Middle Eastern cuisine. So, if you are in search of the traditional recipe for luscious yet light hummus dip, here it is for you:

Traditional Hummus Recipe

  1. Add 1 teaspoon of baking soda to a large bowl of hot water and soak 2(1/2) cups of dry chickpeas (garbanzo beans) in it overnight for 24 hours. Change the water after first 12 hours but do not add more baking soda.
  2. Once ready, drain the water and rinse the chickpeas thoroughly under cold running water while rubbing the skin off gently. 
  3. Cover the peeled chickpeas by water in a heavy-bottom cooking pot.
  4. Bring the entire thing to a boil and keep skimming off the froth on the top of water. Then, lower the flame and simmer for 2 to 3 hours so that the chickpeas become soft enough. Strain them and preserve the cooking liquid.
  5. Crush the cooked and peeled chickpeas along with minced garlic using a mortar and pestle. Includ fresh juice of a lemon, 6 heaped tablespoons of raw tahini, 1(1/2) teaspoons of salt, and 3-4 ice cubes to it.
  6. Add the preserved cooking liquid slowly to add a nice body and flavour to the spread. Keep grinding until the consistency is rich, smooth, and silky.
  7. Top the spread with a generous drizzle of extra virgin olive oil along with cooked whole chickpeas and a few sprinkles of cumin and sweet paprika.
  8. Finally, serve your creamy-smooth hummus with pita bread and vegetables.
Tips to Perfect Homemade Hummus
  • Find small chickpeas of Bulgarian or Hadas variety with smooth, light brown skin.
  • Being raw sesame seed paste with the goodness of natural sesame oil, tahini plays the key role in making the smooth, thick, and most delectable hummus ever. Apart from this, humas with sesame seeds or toasted sesame oil is also popular. However, virgin sesame oil is not a good alternative for this.
  • To avoid the raw heat of garlic in your hummus food, try to find cloves with firm heads and no green sprouts inside.
  • You can buy hummus online but preparing it at home and enjoying fresh is always better as it prevents the dip from thickening and turning less tasty.
While mastering the art of making authentic hummus needs skills and patience, it is highly economical and extremely satisfying. Moreover, if you want to stay away from the preservatives and citric acid used in store bought hummus, this is the way to go.
